Scallops are very much in demand as a seafood item and are used in many cuisines all over the world. Nowadays, scallops are caught by means of scuba diving. This is solely because they fetch a better price as compared to scallops that are obtained by traditional methods. These popular kinds of shellfish can be cooked in a variety of ways as per different types of cuisines.
Scallop with Prawn
Ingredients
Uncooked king prawns (450-500 g)
Scallops (600 g)
Olive oil (1 tablespoon)
Garlic clove - crushed (3)
Lemon juice (3 teaspoons)
Dry white wine (4 tablespoons)
Cream (1 cup)
Dill (1 tablespoon)
Asparagus - thin stemmed (500 g)
Sugar snap pea - trimmed (200 g)
Fish stock granules (1 teaspoon)
Fresh parsley - finely chopped (2 tablespoons)
Preparation:
Take a bowl and combine the prawns and scallops in this. Add some oil and garlic as well. Use a BBQ to cook the seafood. Once cooked, remove from heat and keep it covered. Then, you can either boil or steam the asparagus along with the peas till they are tender. Once done, drain and keep it covered.
Take a pan and add some juice and wine to this. Bring the mixture to a boil. Reduce heat. Now, add the cream, dill, stock and parsley. Boil this again. Add some seafood as well. Cook the preparation but keep it uncovered. Serve with vegetables on a plate, which has the seafood along with it. You can even garnish it some slices of lemon and dill. Any remainder amount of parsley can be sprinkled on top.
Scallops with Mayonnaise
Ingredients:
Freshly ground black pepper (1/2 teaspoon)
Green onions / Scallions - chopped (1/4 cup)
Large scallop shells - (12)
Large sea scallops - should be cut horizontally in half (24)
Hot mayonnaise (1-1/2 cups)
Salt (1/2 teaspoon)
Preparation:
Preheat the oven to around 400 degrees F. Meanwhile, ensure that the mayonnaise is hot and prepared; ready to be used. Place these scallop shells on a baking sheet. At the same time, use some salt and pepper and season both sides of the scallops. Place around 2 scallops in each shell. Use 2 tablespoons of mayonnaise over them. Place this on the top rack in the oven. Wait till the mayonnaise turns a shade of golden brown. This could take around 10 minutes. Use some green onions as a garnish. Serve hot!
Grilled Scallop
Ingredients:
Butter or Margarine (3/4 cup)
Sea scallops (1-1/2 pounds)
Fresh parsley - chopped (1/3 cup)
Chopped onions (2/3 cup)
Garlic - chopped (3 cloves)
Fresh lemon juice (1/4 cup)
Salt (1 pinch)
Preparation:
You would need to begin by preheating an outdoor grill for medium heat. Take a saucepan and when it's kept on medium heat, melt some butter in the pan. Now, cook some onions along with garlic in this till it turns soft. This may require you to cook it for 5 minutes. Then, remove from heat and add the lemon juice with a pinch of salt.
Meanwhile, take a large bowl and place some scallops in it. Use some butter mixture and toss the scallops in this. Place it aside for 2 minutes. You can use a wire grill basket or simply thread the scallops onto the skewers. This will help you to cook it on the preheated grill. Cook for a duration of 4 minutes for each side so that they are cooked evenly. Now, place the butter mixture back into the saucepan. Boil the same and once done, reduce the heat to a low setting. Take the grilled scallops and toss it in this mixture. Serve hot!
