Healthy Fish Recipes

Though eating fish is considered healthy, in fact it is recommended by doctors to some, many people still avoid fish mainly because of the fear of calories. Actually this fact is very contradictory as fish itself contains very less calories compared to other red meats. But we cannot consume fish just like that and nor can we boil it like an egg, so we apply many spices to it and deep-fry it in lots of oil; the resulting product does contain a lot of calories! Pan Fried Bass Recipe
Ingredients
  • 2-3 scallions, thinly sliced, (for garnishing)
  • 6, -inch-thick slices peeled fresh ginger
  • cup minced peeled fresh ginger (for sauce)
  • cup chopped garlic
  • cup sesame seeds
  • 2 tbs grape seed oil, or canola oil
  • 2 tbs toasted sesame oil
  • cup reduced-sodium soy sauce
  • 6, 5-ounce portions striped bass, or any white fish
Process

Boil 1-2 inches water in a large pot, the pot should be large enough to hold a two-tier bamboo steamer. If you do not have a steamer, set mugs upside down in the pot and cover them with a large heat resistant plate on top. If you are using a steamer, put heat resistant plate on each steamer basket. Now place about 3 portions of fish on each plate and place a slice of ginger on top of each portion. Cover it and set over boiling water, boil for about 6-7 minutes and then set aside. Take a small bowl and add garlic, sesame seeds, ginger in it, set aside. Take a medium-sized skillet and heat grape seed or canola oil in it, when oil heats add ginger and cook until fragrant, for about 1 minute. Add sesame oil, let heat and then add soy sauce, cook for about 1 minute. Now transfer the fish to a deep platter, remove the ginger slices and pour the sauce over the fish, garnish with scallions. Baked Trout and Potato Recipe
Ingredients
  • 150 g plain low-fat yogurt
  • 200 g cucumber
  • 1 tbs extra virgin olive oil
  • 4 sprigs fresh tarragon
  • 4 small whole trout, about 300 g each, cleaned
  • Pepper to taste
  • cup baby arugula leaves to garnish
  • 2 tbs chopped fresh mint
  • 1 orange, cut into 8 slices
  • 750 g new potatoes, washed and quartered lengthwise
  • 1 lemon, cut into 8 slices
  • 4 tbs orange juice
Process

Preheat the oven to 200 degrees C, put 2 baking sheets in the oven to heat. Now take a large saucepan and place potatoes in the, pour boiling water over them to cover. Bring to a boil and then simmer for about 5 minutes, drain and keep back in the pan and drizzle oil over them. Toss to coat. Now roast the potatoes for about 10 minutes, turn and roast for 5 minutes more, and set aside. Cut the lemon slices and orange into half and set aside. Now put the sprigs of tarragon in the trout along with some pepper. Put the orange and lemon slices on the foil and keep the trout on top, cover with remaining fruit slices if any. Season with 1 tbs orange juice, over each fish and wrap the foil around the fish, cover completely and twist to seal. Place the wrapped fish on the second baking sheet and bake for 20 minutes. Meanwhile, grate the cucumber and then squeeze out the liquid. Take a bowl add yogurt, cucumber, mint and pepper, mix together and set aside. Put the baked tout in serving places, along with roasted potatoes, orange and lemon juice. Garnish with baby arugula and serve with cucumber sauce. Grilled Salmon Recipe
Ingredients
  • cup chopped pecans
  • 3 tbs snipped parsley
  • 1 tbs. lemon juice
  • 2 tsp grated onion
  • 1 (1-lb.) can salmon
  • tsp liquid smoke
  • 8 ounces fat-free cream cheese
  • 1 tsp horseradish
Process

Take a bowl and add all ingredients except pecan and parsley in it, blend well. Place this mixture on a piece of waxed paper and roll it. Combine parsley and pecans in a bowl, mix well and add them to the fish roll. Chill this roll, serve with crackers.
